ZUCCHINI FRITTATA

INGREDIENTS

3 tbsp olive oil

1 large red pepper, cored and thinly sliced

1 large yellow pepper, cored and thinly sliced

2 garlic cloves, crushed

6 eggs

Salt and pepper

1 small red onion, thinly sliced

1 medium zucchini, thinly sliced

5oz shredded Italian cheese

DIRECTIONS

  • Heat oil in a large, oven-safe frying pan. Fry onion and pepper slices over low heat for about 10 minutes. Add remaining oil to the pan. When it is hot, add garlic and zucchini slices. Fry for about 5 minutes, stirring constantly.

  • Beat eggs, salt and pepper in a bowl. Mix in shredded cheese. Pour the egg and cheese mixture over the vegetables in the pan, stirring lightly to mix. Make sure that the base of the pan is evenly covered with egg.

  • Cook mixture over a low heat, until it is just set. Put it under the broiler (lowest rack) to brown to top a bit. 

  • Let stand for about 5 minutes before cutting. Cut in sliced like pizza and serve warm or cold.
