SWEET & SOUR MEATBALLS

INGREDIENTS 

1 lb ground beef

1/4 cup bread crumbs

2 tbsp chopped onions

4 tbsp soy sauce

1/2 tsp salt 

1/4 tsp pepper

1 tbsp oil

1/4 cup sugar

2 tbsp cornstarch 

2 tbsp vinegar

1/2 cup water

1/2 cup reserved pineapple juice

2 green peppers cut into 1" pieces

13oz can pineapple chunks (reserved juice)

DIRECTIONS

  • Mix together ground beef, bread crumbs, onions, 2 tbs soy sauce, salt and pepper.

  • Shape into 1" balls and fry in oil until brown. Drain and remove meatballs.

  • Combine sugar, corn starch, 2 tbs soy sauce, vinegar, water and pineapple juice.

  • Cook stirring constantly until mixture is thickened and boils.

  • Add green peppers, pineapple and meatballs.

  • Cover and simmer 15-20 minutes.

  • Serve over rice.
