PENNE

With Spicy Sausage, Peppers, Onions and Marinara

INGREDIENTS 

2 oz olive oil

1 tbsp garlic, chopped

1 tbsp shallots, chopped

3/4 lb hot Italian sausage, skinned and mashed

3/4 lb sweet Italian sausage, skinned and mashed

1 large onion, diced small

1 medium green pepper, diced small

2 1/2 cups marinara sauce

8 oz penne pasta dried

1/8 cup parsley, shopped

1/3 cup Loccatelli Romano cheese shredded

DIRECTIONS

  • In 2 qt saucepan, heat up olive oil. Add garlic and shallots and stir for 30 seconds.

  • Add sausage, onions, and peppers. Stir frequently until sausage is cooked. Discard oil and add marinara sauce. Simmer for 5 minutes. Season with salt and pepper.

  • Bring 3 qts of water and 2 tbs of salt to boil. Add penne pasta. Cook 8-10 minutes under cooked.

  • Top pasta with sauce and sprinkle with Loccatelli Romano and parsley.
