BAKED POTATO EGG BOWL

INGREDIENTS

2 large potatoes

Baked (russet) butter

Salt and pepper

2 eggs

Shredded cheese (any)

Herbs of choice

Bacon or sausage

DIRECTIONS

  • Bake/cook potatoes.

  • Cut off top of potato and spoon out insides.

  • Put butter on the inside of the potato bowl and add cheese.

  • Crack 1 egg in the potato bowls and top with herbs, cheese and bacon/sausage bits.

  • Take insides of potatoes and mix with herbs, cheese and bacon/sausage. Microwave 30-45 seconds to serve alongside potato boats.

  • Bake at 350˚ for about 20 minutes or until egg whites are set.
