AVOCADO TOAST

INGREDIENTS

1 ripe avocado

2 slices of bread of choice

1 garlic clove (cut in half skin on)

Extra virgin olive oil

Salt and pepper

Lemon juice

Finely chopped cilantro or parsley

DIRECTIONS

  • Cut avocado in half and remove seed.

  • Toast bread of choice.

  • While toast is still hot, lightly rub the surface with the cut side of the garlic clove

  • Use a spoon to scoop avocado flesh out, then add lemon juice, salt and pepper.

  • Spread over top of toast.

  • Sprinkle with cilantro or parsley and serve.
